This Week’s Eats: Week of December 2nd 2013

This Week's Eats - December 2nd, 2013 Since getting home from my nephew’s funeral, I’ve fallen way off the meal-planning bandwagon. And OH! have I been paying for it. The daily stress of ‘what do I make for supper?’ has been haunting me. I promised to get it done 2 weeks ago, but I just couldn’t find the motivation to do it. Now that a new month is before us and the desire to reduce as much stress and work in the kitchen as possible (and a little nudge from my coach), I finally bit the bullet and created my plan for December.

In hopes that it will help give you motivation, I share with you my meal plan this week.

Monday, December 2nd

Tuesday, December 3rd

Wednesday, December 4th

  • Breakfast: Sliced apple & almond butter
  • Morning School Snack: Homemade lemonade; Grapes
  • School Lunch: Leftover Damn Fine Chicken; Crudités
  • School Lunch Treat: Vegan Gluten-Free Energy Bites
  • Afternoon Snack: Grain-Free Granola
  • Supper (just the kids & I): Tuna salad with homemade dressing (EVOO, ACV, salt, dill) with a pickle on the side

Thursday, December 5th

  • Breakfast: Gluten-free cereal & non-dairy milk
  • Morning School Snack: Homemade lemonade; applesauce & sunflower seeds
  • School Lunch: Tuna pepper boats & rice crackers
  • School Lunch Treat: Vegan Gluten-Free Energy Bites
  • Afternoon Snack: Grain-Free Granola
  • Supper (just the kids & I): Frittata muffins*

Friday, December 6th

Saturday, December 7th

  • Breakfast: Smoothie
  • Morning Snack: Fruit & nuts
  • Lunch: Leftovers or canned soup
  • Afternoon Snack: Baby carrots
  • Supper: Hubby takes over tonight, so whatever he plans!
  • Dessert: Chocolate Brownie Bites

Sunday, December 8th
